Hello I wanted to update my email/Apple ID and update my phone number so I am able to use set up my apple pay

If you no longer use the email address that's associated with your Apple ID, you can change it. You won’t lose access to your contacts, purchases, or other account information

First sign out of Messages and FaceTime on all devices. 

Sign in to your Apple ID account online:

appleid.apple.com

In the security section 

add the new phone number first, to allow deleting of the old one.

Allow 24 hours for the change to update wherever the number is used for Apple
