Why does my backup 1 day later, take 10 gb? There is no way that many files changed each day.

That is about the size of MacTeX 2023 with all third-party packages installed and updated, or an operating system update that changed a bunch of System files. A new installation of Office 2021 for Mac (without a custom installation choice) could consume 5 GB or even more. Time Machine is not lying to you.
