How do I downgrade from Apple one premier to apple one family

Follow the steps in the support document linked below to select the Family option for Apple One in the subscription details.

Make sure you backup any data on iCloud you need to keep for all users. Anything exceeding the 200GB of storage space of the Family plan, will be deleted when you change the subscription type.
