Anyone else getting prompted to sign in again since the last update “update Apple ID settings”
“some accounts services require you to sign in again”
but signing in just brings the prompt back again?!

Try and Force Restart your iPhone EXACTLY as shown below and see whether that resolves the issue:
After you have successfully Force Restarted the iPhone, you may see the “some account services requre you to sign in again” screen. If you do then select continue and sign in.

Troubleshooting Passwords Issues After an Update:
A. New App Password:
Note that you would need a new App Password, being that Mail app is a third-party app. You cannot log in using your eMail address password. As an example, go here for gmail: Sign in Using App Passwords - Gmail Help - Google Support
B. Report this as a Bug to Apple:
Do your Part: Provide Apple with feedback on this, letting them know about this issue. Apple may not get back to you directly, but the more feedback they receive on this, the more they will know what is occurring, and what bug fixes to include in updates to come.
