We found that attempting to airplay from YouTube so on iOS results in the video becoming unresponsive. It happens even if we try to mirror the screen.
I can only project the video to the tv if I use the cast protocol to send the video to the YouTube app on the Apple TV or running in the TV itself.
i think it is intentional sabotage.
I could replicate this behavior of the YouTube app.
After switching AirPlay off and on in Settings on Apple TV, and after restarting the iPhone,
then the YouTube app behaved as normal again for AirPlay.

app developers can choose to block airplay if the developer so chooses, it's not unheard of or uncommon
My AirPlay Target is a MacMini. I can steam any video via Airplay except of the YouTube App.
This is reproduceable on 3 different iOS devices. All up to date and freshly restarted.
The problem here is that Google chose to leave the AirPlay button available in the app. It's just not working right.
It would work 1 of 10 times. Same behavior if I mirror my phone.
