How do I set up “ Mail Days to Sync” for my iPhone 13

The iPhone model is irrelevant. The setting is specific to each email account on your phone. In general, only MS exchange and some IMAP servers support this feature. Go to Settings/Mail/Accounts and tap on your email account. If the account supports it you will see an entry for “mail days to sync”. If you don’t see it the account will always sync all mail.
