How do I change fonts, this new for,mat comes up with very. S ball print that I can hardly read.

Preview not showing all fonts that are installed and showing in the Font Book I'm a teacher and often I need to add my student's name or a date to a PDF file which I can easily do on Preview. The problem is that not all my fonts are showing in Preview. They show in Pages, but not in Preview. Does anyone have an idea why is this happening and how can I solve this issue? Thanks in advance!
