That will depend on the software you are using to scan.


Some scanner software may offer a way to set the current and upcoming scans to be added to the same document.


If you are using Image Capture app there is a checkbox, that reads "Combine into single document" on the scan options window, make sure that checkbox is checked and the scans will be added to the same document.


Other software, may have similar options.
