Why won't iMessage accept certain Contacts that exist on my iPhone?

Because they aren't using an Apple device. iMessage on the Mac is limited to iCloud, iOS, and MacOS account messaging. Only on the iPhone, can you MMS/SMS anyone regardless of the type of phone they are using because it is tied to your actual phone number on the phone.
