How to restore default fonts for Apple Mail display?

I inadvertently changed the default font for Apple Mail while testing out making an email signature. I can't find the original, default font. Might have seen "system font" but cannot find it to restore. I hate the way my mail displays with any of the few font options I now see. Even Helvetica is hard to read. I am not comfortable using Terminal. Using Big Sur.


How can I reset Apple Mail to default settings especially the fonts?

Thank you, I tried the shift key launch, but that didn't work.


When you say "if you are fairly confident that you know all the passwords" do you mean the passwords for my 5 Apple Internet accounts for Apple Mail, or my Mac's Admin and User passwords, or my Apple ID? Or are there others I need to worry about?


Before upgrading to Big Sur I kept losing passwords stored in keychain or keychain got messed up (can't remember exact problem), so I'm loath to mess with too many stored passwords.
