My sons watch consistently will stop receiving text or calls

My son has an iwatch set up on the family watch via my phone. He has his own number and cellular service. Consistently he will not receive texts or calls. It will start working again when I am with him and go to the watch app on my phone and manually select his watch. It seems to re-sync when I do that. But why is it happening?

Is his cellular plan eSIM correctly provisioned by his or your network provider and installed?

You could unpair it and set it up again according to

If he uses your carrier fir his eSIM and it is not correctly set up, when you approach him with your phone it may be sharing your connection.
