I have a new physical Mastercard. I don't know if Apple Wallet has automatically updated teh card or if I need to delete the old card and add the new one. The card number is the same, just the CVV and expiry date changed. In wallet, I can't see the CV or expiry date associated to the card.

Most issuers push an update so you shouldn’t have to do anything
This is a virtual card, there is no expiration date if your credit card account stays open. The only way to know if a card is “expired” is to activate the second switch in your Apple Wallet settings.
