Boot using the external drive and upgrade macOS the normal way.

If your external boot drive is running High Sierra, you can use the Mac App Store app to download a newer version of macOS that the computer its connected to can support.

If you're running macOS Mojave or later on the external boot drive, you can use the Software Update option in System Preferences.
