how do you turn off do not disturb?
I hate seeing this do not disturb - the turn off button is not showing anymore...HELP

Great question, and one we'd like to help answer. Do Not Disturb is now part of the Focus feature, and the link above your post has more details about that: Use Focus on your iPhone or iPad
For your question regarding more specifically how to disable Do Not Disturb, this can be disabled under the 'Focus' option in Control Center. You'd tap upon it, then tap on the 'Do Not Disturb' option to disable it. Just in case, this link has more details about using Control Center: Access Control Center on your iPhone
