Mac mini m2 pro external monitor connections

I plan to get a new Mac Mini M2 Pro and connect it to a pair of HP V28 4K monitors. The monitors have both HDMI and DisplayPort connections. Am I best off connecting both via Thunderbolt ports? Or will I not see any difference connecting one via HDMI and one via Thunderbolt? I can spare the extra Thunderbolt port for the first configuration (for now at least), so I'm just concerned about visual differences in the two monitors. I don't have two Thunderbolt cables to do a comparison myself.

The M2 Pro Mac mini's HDMI can support up to 8K resolution at 60Hz.
