I switched from verizon to Mint. Trying to delete the old Verizon esim, but “Delete esim” is not there under Cellular/sims. I can turn it off, but I can’t delete it … the option just isn’t there…

If it is an eSIM, Remove the data plan. For better clarity watch the GIF below
