What difference does it make for me if my emails are sent from the email address I usually use, or from a different email address I use occasionally because I’m hoping it might protect me somewhat from scammers?

It is entirely up to your preference on which email address to use as your "sent from" account. I, personally, like to keep the "sent from" account consistent with the account that the email was originally sent to. This way the original sender does not get confused.
As far as the scam / spam emails protection is concerned, neither your preference nor mine would make any difference.
