For the iPhone 14 Pro is there a way to “number lock” the keyboard? I am trying to put a large amount of numerical data into a note, but after any commas or spaces the keyboard switches back. It is making this process very difficult/tedious.

This isn't a feature of the standard iOS keyboard. What you have described is expected behavior. You can leave Product Feedback and the right team may be able to review it.
You might also check the App Store. There may be a third-party keyboard solution you can download and install. This article will show you how to Add or change keyboards on iPhone.
