I have tried that. The option apparently has been removed.
You would visit System Preferences > General and select: Ask to keep changes when closing documents. You will know that autosave is disabled because there will be a dot in the center of the title bar red traffic light that does not disappear until you manually save the document, and reappears as new content is entered.
If you attempt to quit Pages without first saving it, you will receive a dialog to save or delete the current content.
It exists on macOS Monterey 12.6.2, and very likely it would not have been removed from Big Sur 11.7.2 and then put back in Monterey. I don't have access to Big Sur 11.7.2, but I did test this with the aforementioned version of Monterey and it works there with Pages v12.2.1.
