There was a recent breaking at my home and my HomePod mini has been stolen. What do I do now?

Make an insurance claim. There is no tracking or remote disabling mechanism for HomePod. See also Check your Apple ID device list to find where you're signed in - Apple Support. You can potentially remove the HomePod from the account, but probably not a good idea while you might still need access to the serial number for a claim.
