Did you buy the Appecare + theft and loss coverage (which is insurance)? If you did, start here:

This is different from the "regular" Applecare +; if you did not specifically buy the theft+loss protection, it is not covered.

You cannot buy coverage after the fact - sorry. So you cannot get the theft+loss policy now. You could have if it had not been stolen. That could be compared to trying to get fire insurance after your house burned down.
AppleCare plus does not cover loss or theft.
