If I delete AOL mail from my iPhone, and reinstall it, will I lose anything? I keep getting errors every time I try to read my email.

How Would You Define "Everything"?

No. The eMail is stored on AOL's servers. So, no eMail will be rid of by just removing the account.

As for this error you keep getting what does it read? Providing a screenshot of this message would most certainly help. Important: Block out any personal info(i.e. names) by covering it with rectangles and such through use of the Photos app.
