i dont have the password to unlock
At my job we have this IPad. No one has the pass code to unlock it and we no longer have proof of purchase. How can we reset the iPad?

A process is available to reset the iPad, erase the contents, and establish a new passcode. Read the details in If you’ve forgotten your iPad passcode.
However, if the iPad also is signed into an iCloud account you will not be much further ahead because the device may be locked to that iCloud account and you will require the Apple ID and password of the account with which it was set (which you probably don't have if it was from an ex-employee) OR you will need the proof of purchase - which you definitely don't have. See How to remove Activation Lock. You might be lucky - this old iPad might be sufficiently old enough to pre-date Activation Lock for iPads.
What you might also need is an inventory to record the details of your workplace assets, which contains such information.
