Priority Setting on "Subject:" Line in Mail — How To Kill

This "set priority" drop-down menu has suddenly materialized on the "Subject:" line of my outgoing e-mail. It's a complete nuisance, but I can't figure out how to get rid of it. Please lend me a workable hatchet. (MacOS Ventura 13.0, Mail 16.0)

Open a new blank email

Uncheck the Priority Field

Oh, my goodness, they put it in the message window itself but not here, under the "View" menu, where any normal person would expect to find it?
