Why can't I turn off HDR on iPhone 13 Pro

The photos look like crap. Why would Apple make HDR automatic without the ability to manually turn it off?

I really hate this feature and there are entire threads on reddit about same.

The only thing that seems to work is always shooting in portrait mode. Any other ideas?
