512 SSD, transferred most from older iMac with fusion drive. Says only 10 GB left - after removing many applications, and old files. But documents still are 395 GB and when I go to the list of files, there is nowhere near 395 GB listed. How can I find out what is being stored there so I can delete unnecessary stuff?

Yeah OmniSweeper works and is free. I bought DaisyDisk in the AppStore for $5 years ago and it's similar and a bit nicer to use. For example, you can hover the mouse of the blocks graphically laid out in a daisy wheel, click and deep dive. Find stuff you didn't even know about. In my case I have old disk images that are quite large. Drag and drop to the collector circle in the lower left and then you can delete them all.

Did that, and I don't see "Desktop & Documents listed under the gear icon after doing that. I have 2 TB iCloud storage, with 1.7 TB open. It's the SSD on the computer that is loaded with "documents" that I cannot see. What I'm trying to find out is what are the "documents" that are taking up 316.31 GB.
Do you have Desktop & Documents configured to sync to iCloud?
Press CMD+Spacebar and type in 'iCloud' and look for the one with the Gear icon and click it. Then click on iCloud Drive then the Options button. Make sure Desktop & Documents Folders is NOT checked.
If that is turned on, it will try to sync your Desktop & Documents to the iCloud Drive. How much storage do you have on iCloud?
Great. I'll try it and see if I can find the ancient files on there. I suspect that when I transferred the old iMac's stuff, I got a lot I haven't needed in years. I should have just taken the time to transfer the stuff I wanted and needed, and not use the migration manager. Ah well, live and learn.
Daisy Disk worked beautifully! Turns out it was Dropbox Backup that took up the 300 GB. Stopped that since I already use the iCloud and Backblaze backups. It's amazing how much space I now have. Thanks all!!!
There are a few programs that can show which folders are using a large amount of storage. I like OmniDiskSweeper.
I can try that as well. Currently operating OK, but obviously very little SSD space left - and I don't know why.
