I just downloaded a load of updates and now when I select something on the format menu eg 'table' it comes up as mustard yellow. I am dyslexic and find the colour really difficult to work with and I was wondering is there was any way to change this?

If you are on Ventura, then visit Settings… > Appearance > and pick a different Accent color. I chose Blue. If you are using macOS prior to Ventura, then System Preferences > General > Accent color.
