How do I save the Apple Watch data before deleting and repairing

When you un-pair your Watch it makes a backup in the iphone's data whiuch is restored on pairing again.

Unpair and erase your Apple Watch

Set up your Apple Watch

If you cannot un-pair because the Watch is broken then the latest data will not be backed up.

There can't be very much data in there that needs backing up.
