I have an iMAC (27" late 2013) Processor 3.2. Can I bring this in to have it updated with the new OS?

You are missing the security features added in newer versions, and you are further back than some add-on apps will support; most recent three versions is fairly common for app support. So yes, you are somewhat more exposed to security issues. How much more? That depends on how you use the Mac.
As for malware, well, more than a little of that is marketed as add-on “security” or “cleaner” apps or such.
Most malware around now is adware (FREE! COUPONS! CLEAN! PROTECT! and that sort of thing) that the user installs, or is phishing or other scams that try to fool the user into providing their credentials or such.

Or will it stop working?
Stop? No. When the hardware fails, yes, it’ll stop. Decade-old hard disk drives and other components can fail, for instance. You’ll have issues with some newer apps not supporting that far back as mentioned, and eventually problems making secure network connections; that’s presently mostly arising at macOS 10.13 and older.
If this is one of the configurations with 8 gigabytes of memory with a hard disk drive, those tend to be very slow.
TL;DR: it’s a decade old, unsupported by current macOS, and considered “vintage” hardware by Apple for purposes of repairs.
