I am just wondering if you can have more then one person in a iMessage chat like a iMessage group chat

Yes you can have a group chat in iMessage.
Open the Messages app ▶️ Tap on the Compose button (Top Right) ➡️ Fill in the names of the contacts to create the Group Chat: You can use the + symbol to add contacts.
