Hi all,
while transferring the old mac to the new one via external drive, does it transfer the old iOS as well or only files, apps etc.? I am worried to start the transfer, I do not know enough about it. Many thanks for an answer.

Migration will not move the macOS.
It will move your User Data, applicable App's and Settings to the new Mac.
