Time Machine Delete All Backups of File/Folder

Time Machine used to have an option to delete all backups of a specific file or folder. Where did it go in Ventura

iMac 27″ 5K, macOS 13.0

And it looks like TM on Ventura will force a disk to APFS, regardless of how it was originally formatted. So there is no longer a way to delete individual backups or backups of a specific item. It also looks like Ventura wont let me see ~/.Trash in Finder or in the exclude option in Time Machine. Does that mean that I can't stop TM from wasting space backing up my Trash?
