Screen time is being override by my child
My child is able to override screen time simply by responding to a prompt to override. So screen time really isn’t limited after all. Am I missing something?

Yes, you are.
Probably you have set Screen Time Restrictions directly on your child's device instead of adding you child to your Family sharing and setting the Screen Time restriction on your device for your Child in the Family sharing section.
