Pairing an used apple watch

I just got a used apple watch as a gift , but i can’t connect it. I already disconnected it with the previous owners phone. Every time I try and connect it I get to the apple id part and it wants me to put the previous owners apple id. How do I get the watch to let me connect with my phone. It is the series 3 42mm.
