Is there a way to get my old watch face back. I just want a black background with the digital time centered in the middle. Why is a complication in the center and the time off to the side?! Not centered in the watch is disturbing. Can I undue the update?

You cannot undo the update. Apple does not provide a path to downgrading watchOS. You can go to the Watch app on your iPhone and make adjustments to the Watch faces and choose one that meets what you want. There were some new Watch faces and complications in the latest watchOS, so I'm not sure if the face you were using was changed. You can also take the time to do a reset on your Watch to see if that makes any changes as well. To reset the Watch, press and hold the Digital Crown and power button together until you see the Apple logo and then release. The Watch will reboot.
I'm going to assume you are referring to the Modular face? Apple modified the Modular face and no, you cannot get the previous version back. You might want to try another watch face and see if it may better meet your needs.
