Size is a personal preference and can be influenced by your wrist size. Personally, the larger the screen, the easier it is to read the watch face. If you have an Apple Store or BestBuy store near you, I'd recommend going there and trying them on to see what best fits your wrist, paying attention to reading the screen as well.

For cellular vs GPS, you have to consider if you would like to be able to use your Apple Watch, without having to have your iPhone near you at all times. With a cellular watch, you can leave your iPhone at home and still use the features of your watch. You will need to ensure your cellular provider for your iPhone, also supports Apple Watch and of course, they will charge you a monthly fee (typically $10/month). The first ever Apple Watch I purchased as a GPS only watch. I regretted the decision and upgraded to the next years watch with GPS+ Cellular.
