You didn't say where you are buying an iPhone. If in the United States your iPhone 14 will not have a physical SIM; it's eSIM only.
Everywhere else it will have both a SIM tray for a physical SIM, and eSIM capability.
With regards to Ukraine, there are three providers in Apple's support document Find wireless carriers and worldwide service providers that offer eSIM service - Apple Support who can provide an eSIM service: Kyivstar, Lifecell, and Vodafone.
In some territories some service providers still lock a phone to their own network. If you buy it from an Apple store or authorised Apple reseller it won't be locked.
