I have purchased a iphone 14 pro (128Gb) from US with additional apple care + coverage so I need to know whether the apple care + will work in other counters like (dubai , canada and India) ?

It's at the discretion of the people at the service center. They likely won't have international iPhone models on hand for replacements, and therefore aren't obligated to honor warranties or AppleCare plans from outside their own country(except when both are in the European Economic Area or Switzerland).

The simple answer is no. Apple doesn’t offer global AppleCare coverage. But as mentioned it’s up to the country you’re in. Problem is that the US iPhone is the only version that is esim only so that answer becomes an almost automatic no. If you spend more or most time outside of the US you might want to just request a refund for the AppleCare or have a plan in place if you need to get service (someone in the US you can send it to in order to get the repair taken care of for example).
