My iPhone unpairs my I watch while trying to set up.

Bought a new Iwatch series 8. During setup on my Iphone X, after pairing I choose to update watch iOS selection and the **** thing blinks and unpairs the watch from my phone and sends me back to the start pairing screen. Tried several times and then I hit the skip update button and it did the same darn thing. I’m updating my phone to IOS 16 now to see if I can get this watch set up.
