Handoff works great, until it doesn't

As an example, I copy a picture on my phone, and paste it on the Mac. All good. I take a second picture, and copy it, but when I paste on the Mac, I get the first picture again. What then?

After some period of time, it starts working again. Sometimes hours, sometimes days.

So I have to resort to texting things to myself, as I had to do before Handoff.

It behaved like this on my previous computer (iMac 27 Retina on Mojave) and phone (iPhone 12p), and my new computer (Mac Studio on Monterey) and phone (iPhone 14p).

Any ideas what is causing this?
