My Apple Watch Series 3 won’t update, it stays stuck on the preparing phase and it made me unpair and reset in order to try to get it to update. Now it’s like a new Apple Watch that needs to be updated before it will pair, but it wont update. I’ve updated my iPhone, turned both the phone and watch off multiple times. Called support. And nothing has worked.

Did you ever figure out how to get your Series 3 to update?
I am in the exact place you were - my series 3 is now unpaired and basically a brand new watch and when I try to pair it, it requires the watch update which ALWAYS stalls at "Preparing"...
I even tried pairing it with different iphones just to get the update done, but all fail in the exact same way.
I have spent hours trying all the different suggestions the web has to offer with no luck.

Please Install iOS 16.1 on the iPhone
Cancel the Watch update and update your iPhone to iOS 16.1 first. , then try it again.
On your iPhone look in settings- General - software update - install 16.1
