Hi - I just got the iWatch Series 8 and when I select the "Favorites" view on the Dock, it still just lists every single app in alphabetical order. I restarted my watch and my phone and also tried the tip of deleting all of the Favorites and just adding one - still no luck.
Any tips? Thanks!

Did you set the new watch up as new or did you set it up with a saved backup of your previous watch?

Which button are you pressing to see the Favorites?
They are accessed with the side button. Not the digital crown.
Set up with my iCloud account & iPhone, but this is my first watch so technically new?
If you have never had an Watch before, there aren't going to be any favorite apps that you have designated on the watch to appear as Favorites.
But I set up in the app my preference for "Favorites" vs. "Recents" and I selected which apps I wanted in my Favorites - isn't that supposed to work?
