if you are asking on how to remove an account, go to "Mail Preferences" under the "Accounts" tab. then highlight the account and press the "-" button in the bottom left corner.

but if you mean that you want to remove the app itself from your Mac, sorry, you cannot remove apps that are included in macOS.
