Hi all, I'm using Numbers for the first time and every time I try to SAVE the doc (that I've entered data on) the doc goes grey and freezes !!! Infuriating as then I can't save it / assign it to a specific folder on my desktop etc. Any suggestions to cure appreciated urgent as I need to get my VAT figures in ASAP via spreadsheet, thanks in advance.

Numbers auto-saves. Be sure to give your document a proper name (i.e., don't leave it as 'Untitled') and it will do the saving for you.
With the Numbers doc open you can change the location where it is saved by clicking its name at the top center.
If you are new to Numbers be sure to check out the User Manual at Help > Numbers Help in the menu. It has a lot of useful information.
Also have a look at the templates at File > New in the menu.
