Is there a way to set a data warning or set your cellular data off if the limit is reached on an iPhone 8+?
I saw that this question was requested in 2018 and at the time the answer was no... but we are now in 2022 and the answer may have changed since then.

The answer is still no, but there are 3rd party apps that can do that. DataMan is one.
And it is less likely that it will be addressed, as most carrier are now offering unlimited data plans.

Most of the carriers may do it in the US but that is not the case everywhere else like in Canada for instance.
