Just the symbol or the entire Trash folder ..?

Is this is favorites...(?) You can add it back in if you do not see it

To trouble shoot further you can:

—Test issue in another user (or guest user) account Set up users, guests, and groups on Mac - Apple Support

  This will tell you if it a universal issue or isolated to your user/admin account.

Login and test. Reboot  as normal and test.

Verify your Mail >Preferences>Accounts>Mailbox Behavior

Select your Account in the left column, some make changes then come back to your preferred settings to test.
