How can I delay the lock on my Apple Watch?

I have a series 7, my first Apple Watch. It seems to lock instantly, so every time I want to look at it, I have to type in the passcode, which is really annoying. Can I switch this off without losing Apple Pay? Or just make it take longer before it locks?
