I have rebooted both my phone and my computer with no change (phone not recognized by iTunes.

I also removed the existing version of iTunes, and downloaded and installed the latest 64-bit version of iTunes. Again, there was no change (phone not recognized by iTunes).

You mentioned getting a prompt asking if the computer be trusted. That prompt never appeared on my phone.

The most recent version of iTunes (on the day of writing this) is 12.12.4.1, so by my calculations you are at least six updates behind.

As far as I'm aware, iOS 15 (on your phone) requires that iTunes be on at least version 12.12.0.6. I suggest therefore that you begin by downloading the most recent version. You can do this by click on Help/Check for Updates from the iTunes top bar menu. There will be prompts to help you and you do not need to delete or remove the existing version in order to do this.

iTunes may update in stages, so once the update is complete, iTunes will check for and install further updates until the most recent one is installed.
