Monterey came after Big Sur. You can't install Monterey.
Monterey came after Big Sur. You can't install Monterey since you have a 2014 iMac. You wouldn't be skipping an OS's but even if you were to skip them it is perfectly fine to do so.
your Mac is not compatible with Monterey. Go to Big Sur.
Monterey is newer, so no, you cannot get Monterey but you can get Big Sur
