You can add valid telephone numbers via your iCloud account settings:
Settings > [Your Name / AppleID] > Name, Phone Numbers, Email > [Contactable At] > Edit
Having added (or removed) applicable contact methods, you can choose which to use for Messages:
Settings > Messages > Send & Receive - enable/disable as required
MY MESSAGES CHANGED A FEW WEEKS AGO, ON MY IPAD. THE ONLY OPTIONS ARE EMAIL ADDRESSES, AND NOT MY OHONE NUMBER. HOW DO I GET BACK TO THAT?
